Iris Took Cooks - Quinoa

Please note that I don't eat Pizza and Barbeque everyday - I do cook at home most days but since I just am in love with everything I eat, I feel compelled to share it with you (and it is my greatest hope that you enjoy my food adventures).

My new concoction:

Quinoa Salad

I like to just chop stuff up and throw it all in.  Nothing is more boring to me than an iceberg salad (barf) and for the longest time I thought I didn't even like salad until I started putting tons of stuff on my greens.

Red quinoa (maybe 1/2 cup)
Green olives
Green onion
Almonds
Roasted Red Pepper
Cherry Tomatoes
Chopped up veggie turkey burger
Mixed Greens - but no arugula!

Dressing:  I used the 1905

This was a satisfying and beautfiul salad.  Alas, I gobbled it up before I could snap a photo for you all.  Try it.

Other items that would be fantastic in this salad - roasted chick peas, feta cheese, Parmesan cheese, ANY CHEESE,cucumbers, raisins, chicken (blech), chopped hard boiled egg, or any roasted veggies.

Yum! We eat quinoa 3-4 times a week. I love the Mediterranean quinoa from costco--frozen in 2 portion bags and has feta, sundried tomatoes,and spinach in it! MicrOwave for 3.5 minutes and presto!

For meatless Monday yesterday, we had southwest spaghetti squash. So good and it makes a ton so there are always leftovers :) I add salsa and sour cream.
