Use what you have in your fridge

I hate wasting food so I have been trying to use all my fridge contents.  Here's what I made for lunch and it was excellent!

Eggplant from the share crop- cubed - throw into a hot skillet with plenty of olive oil. You will sear it and then cook it for a while (maybe 25 minutes), until its sort of soft and then add your other veggies.  Eggplant is like a sponge so it needs lots of olive oil.  Maybe that's why it tastes so fantastic.

I added diced onions and cherry tomatoes from the share crop.   Saute.

Then I added just a bit of Heart-Smart Prego Spaghetti Sauce just to make it all come together.  Pepper, red pepper, Italian seasoning.

That was delicious.  Meal in itself.  Then for lunch I added 1/2 cup whole wheat pasta and 3oz grilled chicken to that.  Let me just tell you - SO GOOD!
