Shrimp and Grits

Grits are one of the best grains to cook with (they are so EASY) and a nice alternative to brown rice or pasta if you need a change.

Sorry I don't have a picture, but here is a little recipe I made up last night and I just wanted to share:

Not quite Shrimp and Grits, serves 1 (lol)

1/2 C Quick Grits (pre-made in the microwave)
3 oz Raw Shrimp, tails off
1 clove garlic minced
3 green onions
1 red bell pepper
1/2 C grape tomatoes sliced
1 C baby spinach
1 tsp. safflower oil (or you can use olive, canola, whatever)
Salt, pepper, red pepper flakes, old bay on the shrimp

Heat oil in wok.  Add onions, peppers, tomatoes, garlic and spices and sautee for a few minutes until you like it.  I like my veggies crisp so I only sauteed for 3-4 minutes.  Add spinach and sautee for about another minute.  Add the shrimp pre-seasoned with the old bay.  The shrimp will only take a few minutes - maybe 3 - to turn pink. 

Serve over 1/2 C grits - you might like more - but I wanted to keep the Points Plus low on this one...only 6 points plus!

This was delicious!  Next time I might add a little white wine, and lemon to it for a bit of a sauce...and of course I will remember to take a picture.

I bought a package of sesame ginger Quinoa that is super tasty with stir fried veggies and chicken/shrimp. Super easy and fast - not sure about points, but it's quinoa so it should be good, yes?

I love Shrimp and grits...this sounds awesome! I am a fan of the addition of tomatoes and spinach, most that I have had do not have that and instead of a heavy butter sauce.

I have also really started getting into polenta. Good change from the norm.
